Advanced Royal Icing Workshop: Bridge and Bridgeless Extension Work with Christine Flinn (Two-Day Course)

Students for this advanced course should be have good knowledge of piping skills in order to achieve desired results. If you feel that your piping skills are intermediate, Christine Flinn will also be teaching an intermediate pressure piping course on March 27th and 28th. Information for this course can be found here


Students Please Bring:
  • Plastic side scraper
  • Pallet knife (straight blade) 4-inch blade
  • Piping nozzle cleaning brush
  • PME Seamless Piping Nozzles– (two of) 0, (two of) 1 (Please bring PME, the piping nozzles need to be seamless so no other brand/manufacturer)
  • Parchment paper for piping bags
  • No 1, pure sable paint brush (no nylon mixes)
  • 4 knee high stockings (15 - 20 denier)
  • Small pair of scissors for cutting paper
  • Small container/glass for water
  • Butchers wrap (food grade acetate)
  • 4-inch square cake board
  • 11-inch box to carry items home in
  • Pencil
  • Damp cloth
NY Cake Academy will provide:

  • 6-inch round cake dummy chamfered top edge (3-inch cake depth)
  • 8-inch round cake drum plus a 11-inch cake
  • 20 oz fondant per cake dummy
