Macaron Fundamenetals
In this class you will learn:
- The basis and science of macarons
- How to make a proper French meringue
- How to macaronage, pipe and rest macarons
- How to make a ganache
- How to make simple and elegant macaron decorations
- How to fill and store macarons
Entremet Fundamentals
In this class you will learn:
- The basis and science of entremets-making
- Technical aspects and considerations to successfully make entremets
- How to prepare individual components for a full-size entremets
- How to assemble the entremets into molds
Day 2
Sunday, May 5th | 10 AM - 6 PM
Advanced Macarons
In this class you will learn:
- Advanced techniques to speed up the macaron-making process, such as macaronage with the mixer; faster resting; and splitting the batter into 2-3 colors
- How to make multi-colored macarons
- How to make textured rosettes
- How to pipe shapes (2-3) (e.g., flowers, pumpkins)
Advanced Entremets
In this class you will learn:
- How to prepare a mirror glaze
- How to glaze entremets
- How to apply decorations to the entremets
NY Cake Academy classes are held in our Manhattan flagship at 118 W 22nd St. All supplies and materials included, but if you require any special accomodations please don't hesitate to contact us at custom@nycakeacademy.com. Our classes are hands-on, interactive experiences. So, please dress accordingly. We recommend wearing casual clothing that you won’t mind getting a little sugar on, and flat comfortable shoes. Open toed shoes and sandals are not recommended as this is a safety concern when working within a kitchen. Long hair should be tied back.
